Strawberry cheesecake




Calm down ~ stop licking the screen but I really can't blame you, I licked the plate! It has been a favorite for years and since it is strawberry season in our house , I couldn't resist. 

Ingredients

·      1 packet crushed tennis biscuits
·      100g butter
·      2 smooth tubs of cream cheese
·      ½ a cup of boiling water
·      2 tablespoons of Gelatine
·      1 tin of condense milk
·      and 2 tubs of fresh cream

Method
Make the base: Put the tennis biscuits in a plastic food bag and crush to crumbs using a rolling pin. Transfer the crumbs to a bowl, then pour over 100g melted butter. Mix thoroughly until the crumbs are completely coated. Tip them into a dish and press firmly down into the base to create an even layer. Chill in the fridge for 1 hr to set firmly.

Make the filling: Place the cream cheese ,condense milk  and the cream in a bowl, then beat with an electric mixer until smooth. Next mix the gelatin with boiling water and add it into your mixture while gradually mixing. . Now pour the cream mixture onto the biscuit base. Leave to set in the fridge overnight.



Topping
You could top it with just strawberries or strawberries and strawberry jelly.
